Chicken salad sandwiches are a great use of canned chicken. The chicken is already cooked due to the processing in the pressure cooker. (I shyly admit that I sneak a bite or two of the meat straight from the jar! It is yummy.) Chicken enchiladas are good. Chicken casseroles, Chicken and noodles (soup). Anywhere you would use the bought kind you can use home canned chicken. It is really the same exact concept just done at home. You can use canned chicken for any recipe that calls for cooked chicken. Now you may have to drain the broth but save that for another meal or gravy. And remember to skim off the fat to make it healthy. All this said, it also applies to beef (venison). I'll try posting some recipes when I have a little more time in the recipe forum. But, I'm one of those "dumpy" cooks where I just dump stuff in to make a dish. We just had salmon patties from canned salmon last week and I'll get that out while its relatively fresh in my mind.
I think you need to try doing this soon while your still contemplating it to see how convenient it really is!

Use your canned meat as you would any canned meat you buy at the store - it just cuts your cooking time down because it's already cooked. My parents were pastors and missionaries for years and often would received unexpected guests - no problem when Mom had canned meat in the house (most usually) she would just open a jar of whatever and make something to stretch the meal! No muss no fuss- no stress!! It's a cooks' friend!

Keflavik, I have not been able to tackle canning meat yet. It seems that life has just been so full. My husband is working in Iraq and the children and I have been trying to adjust. We took a vacation to visit my family and now we are gearing up to start school on Monday. I am still going to try canning meat, just when life settles a bit. However I am planning on trying out my pressure canner to make sure it is in good working order. (I'm going to can water in the jars - I saw this recommended on another website.) I truly thank you for thinking of me. I will update you on my progress with the canner and eventually canning meat. Thank you again.

Quick confession.. My husband likes the little cans of 'vienna sausages' .. for when he goes fishing, and so does my son. So.. I use good quality sausages/wieners from the store when they go on sale/mark down and cut them in half and can them in pint or jelly jars! They love them and guess what - they are exactly like vienna sausages! I do not know why they mistified me for years.. they are only canned wieners!! The things we do for our fellas... Don't know if this helped ANYBODY.. but perhaps it's confession time.. Joanna
