We love to try new corn bread recipes and eat what it turns out to be, - NO MATTER WHAT!!! Here is a recipe we recently tried and my family LOVED it. 'Course it has 2 1/4 C. Brown sugar in it..!! But when finished and you take it out make sure to rub a stick of butter over the top and when it cools it makes a crunchy crust! Remember this is sweeeet corn bread!: 2 1/4 C. Brown Sugar 2 C. Cornmeal 1 C. Flour 1 tsp. Soda 1 tsp. Salt Mix well together then add: 2 Eggs 2 C. Buttermilk Bake @ 350 for about a half an hour. If you put it in a square pan like I did you may have to bake for about fourty minutes! When you take it out rub the top with a stick of butter, make sure you get the entire top. This is kinda' dense so you can cut it while still pretty warm and it stays together pretty good. It cuts and holds together pretty good when cold too. My four year old got into it and ate almost a third of it before I caught him (just before dinner!) - we ate it along side chili!! My husband had it again for breakfast with eggs and bacon!

I'm learning to use Splenda instead of sugar...I'm diabetic...have you tried it...they aslso have brown sugar & you can't tell the difference . It's a bit pricey but a necessity here.

I think it is a bit sweeter than what I've tried for sweet corn bread. To some friends I gave one to last week they took it more for dessert - but they do not care for sweet corn bread in their house! My husband still likes it with Chili, and for a snack.. he liked it with roast dinner last week. Probably just one if you are inclined to try and the amt of sugar does not bother you.. to just try. (One of my friends asked me if I put molasses in and how much- I gave her the recipe.)
