This is something I use in the summer in place of potato salad..it's a sweet salad & so easy to make & sure to please!
Sauerkraut Salad
1 JAR (large) of sauerkraut rinsed & drained 3/4 cup sugar (I use Splenda) 1/4 cup oil 1/4 cup vinegar (white) !/4 cup chopped green bell peppers 1/2 cup chopped onion 1/2 cup chopped celery OR 1/2 teasthingy celery seed (I use that) Pimentos for color if desired....I use the frozen chopped onion & red & green peppers & just use the 1/2 cup measurement. Drain & rinse kraut & add all ingredients. Mix well & chill at least 2 hours before serving....best if chilled overnight...enjoy!
