I like to post recipes for frugal dishes and meals on my blog. I've entitled it Frugal Feasting Fridays.
I thought it would be fun for us to share frugal recipes and ideas here as well. Here's a recipe I gleaned and adapted from Taste of Home magazine:
Twice-Baked Breakfast Potatoes estimated cost: $0.99 per serving
Use leftover baked potatoes OR bake them overnight in your crockpot ...
4 baking potatoes, baked and cool enough to handle 1 tbsp. butter 4 eggs, beaten 8 strips bacon, cooked and crumbled OR 10 oz. cooked bulk sausage 1/4 c. sour cream 3/4 c. shredded cheese 1/2 c. minced chives, divided 1 tbsp. minced fresh parsley OR 1 1/2 tsp. dried parsley 1/2 tsp. salt 1/2 tsp. pepper Additional sour cream, optional
In a large skillet, melt butter over medium-high heat. Add eggs; cook and stir until set. Remove and set aside. Cut each potato in half length-wise. Scoop out pulp leaving a thin shell. Mash the pulp with the sour cream. Stir in bacon or sausage, 1/2 c. cheese, 1/4 c. chives, parsley, salt, pepper and eggs. Pack mixture into potato shells. Place on a baking sheet and bake, uncovered, at 375 degrees for 12-15 minutes or until heated through. Sprinkle with remaining cheese and chives. Serve with additional sour cream if desired.

Here's another frugal & tasty meal; total estimated cost $1.75 per serving
Orange Ginger Chicken serves 6
1/3 c. all purpose flour 6 chicken thighs, bone & skin removed & cubed 1/4 tsp. salt 1/4 tsp. pepper oil 1/2 c. orange juice 1/2 c. orange marmalade 2 Tbsp. soy sauce 2 Tbsp. honey 3/4 tsp. ground ginger Garnish: green onion & sesame seeds (optional) 3 c. hot cooked brown rice
Salt & pepper chicken. Dredge in flour (can shake in plastic bag). In large skillet cook chicken in oil over medium heat until chicken is no longer pink. Remove and keep warm. In same skillet combine juice, marmalade, soy sauce, honey and ginger. Bring to a boil, cook and stir until thickened. Return chicken to pan; heat through. Serve over hot cooked rice, garnish with thinly sliced green onion and sesame, if desired.
Tossed Salad serves 6
1/4 c. favorite vinaigrette 6 c. torn lettuce 2 tomatoes, cut into wedges 1 tsp. minced chives 1/4 tsp. crushed thyme.
Toss all ingredients together in a large serving bowl.
Estimated Cost Breakdown: Orange Ginger Chicken - $1.05 per serving Rice - $0.14 per serving Salad - $0.56 per serving

Today I'd like to share a restaurant quality meal that is a fraction of the cost of dining out AND packs only 348 calories per serving.
(NOTE: The recipes below have been gleaned and adapted from Healthy-Hillbilly Housewife.com)
Chicken Cacciatore 4 servings
Non Stick Spray 2 1/2 lb. chicken thighs, skin & visible fat removed 1/2 tbsp. olive oil 1/2 c. onion, thinly sliced 1 green pepper, thinly sliced 1 c. mushrooms, thinly sliced (if canned, drain well) 1 tbsp. minced garlic, about 4 lg. cloves 15 oz. no-salt-added tomatoes 8 oz. no-salt-added tomato sauce 1/2 tsp. salt 1/4 tsp. pepper 1 tsp. dried basil OR 2 tsp. fresh chopped basil 1/2 tsp. dried oregano OR 1 tsp. fresh chopped oregano
Coat a large skillet with non-stick spray. Add the chicken and brown on both sides. Remove it & set aside. Heat the olive oil in the same pan. Add the onions, green peppers, mushrooms and garlic. Saute' until tender & fragrant. Stir in tomato, tomato sauce and seasonings. Bring to a boil. Lay the chicken atop the vegetables. Cover, reduce heat to medium low and simmer 35-45 minutes. Occasionally check liquid content, adding water if necessary to prevent burning.
Buttery Garlic Cauliflower 4 servings
1 lb. chopped fresh OR frozen cauliflower 1 c. water 2 tbsp. butter, softened 2 tsp. chicken broth powder 2 tsp. dried parsley 1/2 tsp. onion powder 1/4 tsp. garlic powder 1 tsp. sugar
Place water and cauliflower in lg. pot. Cover and cook (steam) over medium heat until cauliflower is tender. In a small bowl combine butter, chicken broth powder, parsley, onion powder, garlic powder and sugar. Drain cauliflower & place in serving bowl. Top with butter mixture and stir with rubber spatula to evenly coat cauliflower.
Steamed Spinach 4 servings
8 c. fresh spinach 1 c. water salt & pepper to taste
Place spinach and water in a large pot. Cover and bring to a boil. Stir occasionally as spinach steams 2-4 minutes. Drain & season with salt & pepper to taste.
Caloric & Cost Breakdown: Chicken Cacciatore; 232 calories & 1.52 per serving Buttery Garlic Cauliflower; 62 calories & 0.38 per serving Steamed Spinach; 54 calories & 0.72. per serving
Total Calories per serving: 348 Total Estimated Cost per serving: $2.62

Hello Ladies,
Today I'd like to share another frugal feasting recipe with you all. My Taco Salad recipe is quick, easy and costs only $1.46 per person.
Taco Salad 5 taco sized corn tortillas oil for frying 1 lb. ground meat 1/2 onion, diced 1/2 bell pepper, diced 1 tbsp. chili powder 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. cinnamon 1 clove garlic, minced 5 c. lettuce, shredded 4 oz. grated cheese 1 tomato, diced 1/2 c. homemade salsa (it tastes better and is cheaper than store bought)
Cut the corn tortillas into strips and fry until golden and crispy. (remember to cool, strain and store the used cooking oil in either a metal or glass container for another use later on). Drain on paper towels.
In skillet over medium heat cook ground beef, onion, bell pepper, chili powder, sugar, salt, pepper, cinnamon and garlic until onions are transparent and beef is no longer pink. Taste to test seasoning, add more if desired.
Divide the tortilla strips evenly between 5 large bowls. Add even portions of ground meat mixture. Top with even amounts of lettuce, tomato, cheese and salsa.

Today is not Friday but I thought I'd share another budget friendly meal that my family loves.
Meatball Marinara Sandwiches w/ Tossed Salad is often requested in the B's home and at only $2.18 per serving, it is certainly affordable. I prepare these Italian masterpieces in under 30 minutes, less time than it takes to buzz through the drive-thru.
Meatball Marinara Sandwiches
Meatballs: 1 lb. ground beef 3 Tbsp. grated Parmesan cheese 1 egg, slightly beaten 1 clove garlic, minced 1/2 tsp. dried oregano 1/4 tsp. dried basil salt & pepper to taste
Mix all meatball ingredients well. Shape into 12 meatballs. Cook over medium heat just until browned. Remove and set aside.
Marinara Sauce: 2 8oz. cans tomato sauce 1 clove garlic, minced 1/4 tsp. dried oregano 1/4 tsp. dried basil salt & pepper to taste
Mix marinara sauce ingredients together in same skillet used for meatballs. Add meatballs. Cover and simmer over medium heat for 15 minutes, stirring occasionally, until meatballs are cooked through.
Assembling Sandwiches: 4 whole wheat hogie rolls, halved 2 Tbsp. salted butter, softened 1 clove garlic, minced 4 slices provolone cheese, halved
Combine softened butter and garlic. Spread evenly on rolls. Toast buttered rolls under broiler for 2-3 minutes until edges begin to turn brown. Remove from broiler and place 3 meatballs on one half of each roll. Pour remaining sauce over meatballs. Top with 2 halves of provolone cheese, return to broiler until cheese is melted, about 2 minutes. Top with remaining half of rolls. 4 servings
I like to serve these hot sandwiches with a lettuce, tomato and cucumber salad.
