Hello Ladies,
We are planning family getaway to Great Wolf Lodge which is an amazing place to go but the downside is their food isn't all that great.We really like their breakfast buffet but their lunch options are far too expensive and the dinner buffet is way too expensive for the quality which is lacking. So I am working on making us a vacation menu since thee room does have a microwave and a mini fridge. So I thought I would share with y'all my ideas so far and see what y'all thought.
Lunch Ideas = While I am still here at home I am going to season and cook some boneless skinless chicken breast. One way I am going to season them is with the hidden valley ranch packet. The other idea I had was to season them with the fajita seasoning packets.
Then I am going to shred the chicken and put into zip lock freezer bags & freeze until we go to leave then put the frozen chicken bags into another water tight container and then put into the cooler.
Then I am going to use the seasoned chicken to make different wraps.
With the ranch chicken I am going to add chicken,ranch dressing,romaine lettuce, & shredded cheese on a tortilla. We will have these pool side with water/Gatorade to drink & fresh pineapple.
With the fajita chicken I am going to add chicken, shredded cheese, pico de gallo with cilantro,with sour cream & guacamole on a tortilla. We will also have these pool side with water/Gatorade to drink & fresh pineapple. (the pineapple is a rare treat and something we all love so much.)
Then I am going to make pitas and add, hummus, feta cheese, tabbouleh, & fresh veggies. Then I am probably going to have to make the kids a pb&j or a cheese roll up. (I normally don't make my kids different things than what we eat but I don't know if I can convince them to eat the pitas or not. I am going to try all these menu ideas at home before we leave and see how we all like them. So I will know more about what the kids will and won't eat. I will serve pears & we will drink water/Gatorade with this.
Snacks=
I am going to make some sweet & savory muffins while I still home and pack these to go with us for an easy filling snack. I will add my recipes and which flavors I decide.
Raisins,apples,bananas, string cheese, & animal crackers.
Suppers =
I am going to make chili dog casserole while at home & freeze it. Then transport in the cooler. By the time we get ready to eat supper it will be thawed and I will have to do is put our portions on our plates and heat up in the microwave. I am going to serve creamy corn with this which is made in the microwave. I am also going to serve raw broccoli with ranch dressing with this.
Then I am going to take a pot roast & make it with potatoes & carrots in the crock pot. I will make this once I am there and I am not sure if I am going to buy my pot roast here or there yet. With the roast I am going to serve a fresh salad & rolls.
While I am at home I am going to make a chicken teriyaki stir fry. I will freeze this and then transport. I will just heat it up in the microwave. I am going to bring my rice cooker and make rice to go with this. I am also going to buy frozen egg rolls and steamed dumplings to serve with this.
Snacks & desserts for in the room =
Jello Cups Pudding Cups Cookies I make at home and pack to go with us Apples Bananas Peanut Butter Broccoli Cauliflower Ranch dressing Animal crackers Raisins
The food we are going too eat on the way there is Bagels & cream cheese Raisins Ham Steaks (this is a maybe) Iced Coffee for me & Handsome And a fun smoothie for the kids water I will make this right before we leave.
If any of you ladies have any suggestions or ideas please feel free to reply. I love meal planning and menu planning. I will also be trying the different recipes out before we leave and I will let y'all know how we like them. I will also post the recipes once I know we like them.

Fabulous ideas ... I especially like your idea to take your crock pot along - perfect for a rented room.
Will you prepare your casserole(s) in aluminum disposable pans? Also, will you all be using disposable plates and dinnerware?
Looking forward to your update on how it all goes ...

Wow, you're really organized! It sounds like you've got it under control. Those are some delicious ideas. I've recently rediscovered my crockpot for Sunday dinners. It makes Sunday afternoon go so much more smoothly when dinner is ready when you arrive home.
Your comment about the pitas reminded me of an article my husband was reading... he happened upon a nutrition article that suggested that children will eat ANYTHING if you wrap it in a pita! Then he put pita bread at the top of the shopping list, lol.

To answer your question TB I have a whole bunch of 9X13 pyrex glass dishes that have lids so that is what I will be taking my casserole in. I am planning on buying plastic/paper (not sure yet which) plates & silverware. I don't normally buy these and the few times I have I have had bad experiences. The foam plates melting, the paper plates leaking through or being punctured with a eating utensil so I am not sure what brand to buy. Any suggestions ? We will bring our own water bottles and sippy cup for my almost 2 year old. I am so excited for this trip I can hardly wait !!!!

Jen I really hope that the article you husband read was right lol. We will find out soon Handsome gets paid on Thursday night so I am plannung to make pits for lunch on Friday ! Crockpots are great for motels and so are rice cookers. I am not normally a super organized person (I wish) I have had a whole year to think about this trip lol. Last year when we went it was our first time going and we didn't know about the food being so super expemsive and bad quality for any meal besides breakfast. So the only time we felt satisfied from hunger was once per day after we ate breakfast there. My family are big eaters and when we swim we get even hungrier. We all joke and say we are hungry like lumberjacks after swimming. Since this place is an indoor water park we will really really really be hungry. I know from last years experience and cold sandwiches and chips didn't cut the mustard if you know what I am saying. Hopefully this menu will work out. I am making the ranch chicken tomorrow so I will let you know how it goes.

I've also had experiences with the foam plates melting from really hot items AND in the microwave - YUCK! The best disposable plates I've found are both fairly expensive, but for occasional use, like a vacation, I think they would be worth it.
Plastic, like the solo cup type of plastic AND the Chinete brand (almost like a thin, white cardboard) paper plates have worked best for our family. Both are really durable, will hold large servings, and don't leak. Personally, I would most likely choose the Chinete type because they are made from a paper product which decomposes better than plastic, thus it's a little easier on the environment. Also, if I took the plastic type along, I'd be too tempted to wash them for re-use - - I don't like spending my vacation time washing dishes.

I agree with tb: the Chinet brand plates are quite sturdy. More expensive, but you do get quality.
