Pulled a bunch of beets this weekend and will be canning them as well as making jelly with the juice. Also pulled turnips. Can you can turnips? Got lots of pickles to make as well. And so it begins.. . . . .

I expect you could can anything you want, but root vegetables last so long under the right conditions it's possible that it may not be worth the effort to can them. (I say from the depths of my experience of never having canned anything or maintained a root cellar, lol. But that's what I'm told by my husband's family, which is from potato country.)

Home Canned Turnips (from the Ball Blue Book of Canning)
1 1/2 to 2 lb. turnips per quart salt (optional) water
Wash the turnips, drain. Peel turnips (a potato peeler works well) & cut into desired size. Cover turnips with cold water in a large saucepot. Boil 3 minutes. Pack hot turnips into hot jars, leaving a 1 in. headspace. Add 1/2 tsp. salt to each pint jar or 1 tsp. to each quart jar, if desired. Ladle boiling water over turnips leaving 1 in headspace. Remove air bubbles. Adjust two piece caps. Process pints 30 min, quarts 35 min. at 10 pounds pressure in a steam pressure canner. Note: Turnips usually discolor and develop a strong flavor when canned.

Don't throw the beet tops away ... here's a delicious recipe.
Sautéed Beet Greens
tops of 6 -8 beets, washed & roughly chopped 1 sm. onion, chopped 3 slices bacon, chopped 1 tbsp. sugar salt & pepper to taste
Fry bacon over medium heat until almost crisp; add chopped onion & sugar. Continue sautéing over medium heat until onions are clear. Add chopped beet greens; cook & stir until wilted. Season with salt & pepper to taste.

What could I use canned turnips for? I don't think I've ever seen them in the store. Hubby has some dehydrating right now and I think they will make an interesting chip.
