Sorry I've been away from the forum ... canning season and a new school year is upon us.
Thus far we've canned green beans, tomatoes, sauerkraut, grape jelly, apple jelly, plum jelly and plum butter. We've froze over 30 # of spinach and Swiss chard, more than 30 # of broccoli and cauliflower, over 40# of squash and zucchini and made loads and loads of zucchini bread and yellow squash muffins for the freezer.
In the upcoming weeks we will continue with tomatoes and begin harvesting corn, beets, onions, potatoes, pumpkins and cantaloupe.
Is anyone else canning garden produce this year? Are your gardens producing well this year?

It's been about 6 weeks since our canning season began and we finally "see a light at the end of the tunnel". We dug our potatoes, beets & carrots this weekend. As soon as the beets and carrots are canned we will be finished - We harvested over 1,000 lbs. of produce the season, WooHoo!
Next on the list is adding shelving and re-arranging our basement storage room to make better use of the space so we will have plenty of room to store our abundant harvest.
I give all thanks and praise to the Lord for providing us with such an abundance of food for the upcoming winter.
