Ok, I used to make a lot of homemade breads for our family. Well life got in the way. Once things get settled from moving I am planning on getting back into the routine of making my breads. I used to bake my bread and then freeze it. However, I know you can freeze the dough once the first rise has done but my problem was that before it actually froze, the bread would start rising in the freezer. So my question for you is this... How to I freeze my dough and get it frozen before it starts rising? As I take a loaf out to thaw during the day it can do the second the rise at that time, but in my old case I would have a mountain size loaf because it was already partially in the rise state as it froze. Any help please!! !! Thank you in advance.

Hi Keeperofthehome,
Although I freeze bread, I've never froze the dough. However, I am acquainted with a lady who freezes bread dough all the time. She says you have to weight it down to keep it from rising during the freezing process. She also says the dough will rise while thawing on the counter, it just takes longer than freshly made dough.
Hopefully, some of the other ladies on this site will have some practical experience with this.

Ok I am revisiting this again...
TB~ when you say the lady says ti weight eh dough down...how exactly is this done? I guess I am not understanding it correctly.

It is my understanding that she wraps it in plastic wrap, then places it in a zip lock, air removed, and then sets something heavy on it like an ice tray or a package of frozen meat.
Personally, I've never tried this, but it seems to work for my friend.

I had meat packages (chicken breasts, etc. ) that were placed atop the packages, and it worked.
