Omlette in a Bag
Ingredients: 1 freezer bag per person (qt. size) 2 eggs per person diced green pepper diced onions diced ham cubed cheese Large pot boiling water
Preparation: Allow each person to fill a FREEZER bag with 2 eggs and 1 Tbsp (15 ml) of any of the above. Add salt and pepper. Shake well to combine all. Drop into boiling water and cook until set. Slide omelette out of bag onto plate

8 servings grits 8 eggs 3/4 lb. cheddar cheese, grated 2 tsp. bacon drippings, or margarine.
Cook grits as directed on package. Chill. Beat eggs until fluffy. Mix with grits and half of cheese. Grease 3 qt. casserole with bacon drippings or margarine. Pour mixture into casserole. Top with remaining cheese. Cover. Refrigerate overnight. Bake at 350 for 40 minutes. (You can add crumbled bacon or sausage for extra flavor.)

Toad in a Hole 1 egg per person 1 slice of bread per bread butter or magerine
Cut a circle in the slice of bread. Butter the bread on both side with the hole. Heat skillet and put the bread in the skillet next pour the egg into the hole. When bread is brown and the egg is set flip over to brown and cook the egg.

I really like the toad in a hole idea. I can never get DHs eggs right. . well yesterday was my first day trying. LOL . . But this sounds easy!

Sunday Morning Casserole
4-6 slices of bread 1 lb. sausage or 1 lb. bacon (I use the hormel or oscar meyer bacon bit chunks from the salad isle, it makes it really easy- 2 bags is perfect) 6 eggs 1 1/2 cup milk 1 cup grated sharp cheese 1 tsp. dry mustard (you can use reg. mustard too) dash of salt and pepper
Cut bread into cubes, do not twist or remove crust. Put into a greasaed 8 x 11 inch or 9 x 12 inch baking dish. Saute sausage if your using sausage and drain off grease, crumble this into bits. Spread saugsage or bacon over bread cubes. Beat eggs w/milk add eggs, mustard, salt and pepper. Pour egg mixture over bread and sausage/bacon. Cover w/plastic wrap and refrigerate overnight. Put in a cold oven in the morning and babke at 350* for 35 minutes.
This is great for Sunday morning breakfast or anytime your short on time or just want a quick something to have ready to cook. My family loves it. My husband has also taken it to work w/him for breakfast at work several times, the men at his work always love it and he never brings any back home.

FRIED CORNMEAL MUSH
1 cup cornmeal 1 cup cold water 3 cups boiling water 1 teasthingy salt
Grease loaf pan. Mix cornmeal and cold water in saucepan. Stir in boiling water and salt. Cook, stirring constantly, until mixture thickens and boils. Cover, cook over low heat 10 minutes. Sthingy into loaf pan. Cover, and chill at least 12 hours. Cut into slices and fry in butter, until it starts to brown. Top with sugar or syrup.

Sisters... I have a question....How do you cook grits? I will admit, I have been making them like Cream of Wheat, they stirred up nice and seemed to be fine, and then someone told me they are to be fried?!!! Yikes, I am Grit-Hopeless and need help on how to properly cook them...I don't read packages as you can tell.. Smiles!! Sister Penny

I follow the directions on the package .. when I have leftovers I save them and put them in a square pan I usuall fry them the next day .. my family loves them fried.

This post will contain 2 quick and easy breakfast recipes. Hope you enjoy them.
1 tube sausage 2 cups baking mix milk
Fry sausage and set pan at angle on burner (cut burner off). This way the grease runs to the lower side of the pan. O.K. while the sausage is draining, take baking mix and follow the pancake directions. When that is mixed put in 1/4 of the sausage in the mixture. Wala! You have sausage and pancakes once they are cooked. You can get up to 4 servings with 1 tube of sausage.
Then, take the grease and heat it up and add self-rising flour (about 3/4 cup) and stir. Once the flour is thickened stir in milk and keep stirring. Add milk and stir until you reach the consistency and taste that you like. I add salt and pepper at he end. Wala! You have gravy for some biscuits when you make them. I have had the gravy last up to 1 week.
These are the 2 recipes that I use for breakfast. I can get a weeks worth of breakfast done in a couple hours or less. i hope you all find these very delicious and helpful. God bless you all.

My family loves scrambled eggs with sausage or ham or bacon & cheese in them...when I have fresh green peppers & tomatoes I'll add those too...my youngest daughter eats fried egg sandwiches for breakfast...just fry it hard..I poke the yolk then she likes Miracle Whip on the bread.....at least she eats it.....

Does anyone fix french toast anymore....my girls love it but I buy the French bread so I can cut it thicker....

Yes! That's another use for my "day old bread". If my #3 is home when I'm baking bread, he actually tells me he hopes it doesn't turn out right, because he knows it will become French Toast the next morning. Fortunately, my bread baking has improved tremendously over the years and now I rarely have a bad batch. So I use any bread that is on it's way to becoming stale.
French Toast From Our Home
4 eggs, beaten well 1/2 tsp. vanilla 1/4 tsp. cinnamon 1 pinch black pepper 1 tbls. sugar 1/2 c. milk
Combine all ingredients in a wide bowl or deep dish pie plate. Soak sliced bread in egg mixture for 30 - 40 seconds. Brown bacon grease over medium heat until golden, turn and brown other side until golden. Cut into triangles, dust with powdered sugar, serve warm drizzled with honey.
Note: I have used thick sliced cornmush and sliced corn bread. MMMM
