Since it has been a bit warm lately, and I already set up my monthly menu calendar, we are going to have stuffed baked potatoes. Yes with all the toppings too. Don't get me wrong I love tradition, but when your light bill runs $300+ and with the heat outside, this is all I'm doing. I can raise the windows, cook taters while we're at church, come home to a cool, fresh, tater smelling house. I pray that you all have a happy Resurection Day.

I know what you mean I was looking for a dinner idea that was good and inexpensive. We certainly can try this. Thanks

We will have ham, "funeral potatoes" asparagus, corn casserole, biscuits or dinner rolls and strawberry jello dessert.

We're going non traditional this year and having our family favorite...mexican. I'm making enchiladas on homemade tortillas, layered dip, spanish rice, and fiesta corn. This meal is a also a little easier on our budget.

I've never had to make an Easter Dinner. We always have dinner at my husband's grandmother's. Instead of doing a big ham, we just have ham sandwiches. It's more of a luncheon than a dinner. Everyone brings a little something. We will probably have meaty nacho dip with chips, a garden salad, and a few other salads, maybe a baked bean casserole of some kind, and then the ham slices with "grandma rolls". Grandma Rolls are awesome! I look forward to them at every get together! They are crusty on the outside, and soft and sweet on the inside. Mmmm.
