With zucchini in season I try new dishes for a change...this is great over rice ...I also added a few fresh mushrooms. You can also add left over chicken breast if you shred it..
Japanese Zucchini & Onions
2 Tablesthingys vegetable oil
1 med. onion, thinly sliced
2 med.zucchinis, cut into thin strips
2 Tablesthingys teriyaki sauce
1 Tablesthingy soy sauce (low salt)
1 Tablesthingy toasted sesame seed (can omit)
season w/black pepper if desired
Warm the oil in a large skillet or wok over medium heat. Stir in onions& cook 5 min. Add zucchini & cook, stirring about 1 min. Stir in teriyaki sauce & sesame seeds. Cook until zucchini is tender (about 5 min). Stir in pepper & serve immediately.
