One of the Sisters on another site posted this recipe & I've made several batches & it's absolutely wonderful...here's the recipe...
Apple Pie Jam
4 cups tart apples, peeled, cored & finely chopped 2 Tablesthingys lemon juice 1 teasthingy ground cinnamon 1/4 tasthingy ground allspice 4 cups white sugar 1 cup firmly packed light brown sugar 1 box pectin 1/2 teasthingy butter, softened
Put chopped apples in a large bowl & add water to the 4 cup mark (pouring water over the apples to the 4 cup mark). Pour into a heavy saucepan & stir in lemon juice, cinnamon & allspice & butter & pectin & bring to a full rolling boil stirring constantly on high heat. Add white & light brown sugar & return to a rolling boil & boil for exactly 1 minute. Remove from heat & ladle into hot sterilized jars leaving 1/4'' headspace. Make sure jar rim is wiped clean before adding the flat & band. Process in a hot water bath 10 minutes. Makes about 7 1/2 half pints.
