You will never have to worry about a dry roast beef with this recipe. It cooks in the crock pot AND makes its own gravy.
1 3-4 # roast beef 1 can cream of mushroom soup, undiluted pepper to taste
Place roast beef in crock pot. Pour soup over beef. Sprinkle with pepper. Cover and roast on high 4-6 hours or low 8-10 hours.
Remove beef from crock pot, cover to keep warm. Stir thickening (1 tbsp. cornstarch & 3 tbsp. water, mixed well) into gravy. Cover and allow to thicken 15-20 minutes.
If you like to serve potatoes, carrots and onion with your roast beef, just place them in a large pot with 1-2 inches of water and steam until tender. Add salt & pepper to taste.

P.S. I've even placed the roast beef in the crock pot while still frozen, increased the cooking time by about an hour and the results were just as wonderful.
