My family loves salad. I like to find ones that we can use as a meal. ;D Here is a place to share salad recipes with one another.

Caribbean Chicken and Black Bean Salad 2 cups cooked chicken 1/4 c chopped cilantro 1 lrg tomato 1 avocaco 1 can (15 oz) Black Beanhs Lettuce
Toss all except for lettuce in large bowl.
Add Spicy lime dressing 1/4 lime juice 2T olive oil 1T honey 1/2t chili powder 1/4tcumin 1/4t salt 2 or 3 drops hot sauce
shake all together pour over salad. Serve on beds of lettuce.
makes 4 servings

Here are three of my favorite winter salads (no greens).
Brazilian Salad
2 cups small shells uncooked 1 clove garlic 2 cups diced canned tomatoes, drained 1 cup ripe pitted olives, sliced 1/3 cup olive oil 1/3 cup chopped fresh parsley 1 tps salt 1/4 tsp ground black pepper
Cook shells according to package directions; drain. Rinse with cold water if you want to cool quickly; drain well. Press garlic clove or mince fine. Add remaining ingredients and toss. Chill.
Broccoli and Cauliflower Salad
broccoli cauliflower red onion bacon bits
OR
broccoli red onion bacon bits sunflower seeds or nuts (almonds, pecans, walnuts) raisins
Dressing:
1 cup mayo 1/3 cup sugar (can use honey) 2 Tbs. vinegar
Cut apart broccoli and cauliflower, dice onions. Add remaining ingredients and toss with dressing.
Veggie Shell Salad
1 16 to 20 oz package frozen mixed vegetables 1 rib celery, sliced 1 medium onion, diced 1 large green pepper, diced 1 1/2 cups uncooked macaroni shells, cooked and drained 1 15oz can kidney beans, rinsed and drained
In large bowl mix well veggies, macaroni & beans. Toss with warm dressing to coat. Chill several hours or overnight. I place frozen veggie in with the macaroni immediately befor removing from heat and drain all together.
Dressing:
In medium saucepan, mix well:
3/4 cup sugar 1 Tbsp. flour
Stir in 1/2 cup vinegar, a little less if using apple cider vinegar, 1/4 cup water and 1 tsp prepared mustard. cook and stir until thickened. Stir in 1 Tbsp margarine until melted. Cool slightly and pour over veggies.

I am not sure if this is considered a salad or not, its a fruit desert (I love deserts!). I got it from taste of home, this makes a wonderful snack too. It calls for canned fruit, I try to use as much fresh fruit as possible, I also add strawberries to it.
Fluffy Fruit Salad Yield: 6 servings 2 cn (20 oz. ea.) crushed -- : pineapple 2/3 c Sugar 2 TB Flour 2 Eggs -- lightly beaten 1/4 c Orange juice 3 TB Lemon juice 1 TB Vegetable oil 2 cn (17 oz. ea.) mixed fruit : drained 2 cn (11 oz. ea.) mandarin -- : oranges, drained 2 Bananas -- sliced 1 c Heavy cream -- whipped Drain pineapple, reserving 1 cup juice in a small saucepan. Set pineapple aside. To saucepan, add sugar, flour, eggs, orange juice, lemon juice and oil. Bring to a boil, stirring constantly. Boil for 1 minute; remove from the heat and let cool. In a salad bowl, combine the pineapple, fruit ****tail, oranges and bananas. Fold in whipped cream and cooled sauce. Chill for several hours. From: "Taste of Home" Magazine

A new recipe that we tasted for the first time. It was really yummy!
Ramen Noodle Salad
1 pkg (3 oz) ramen noodle oriental soup mix 1/4 cup butter or marg. 1 cut walnuts or pecans, chopped 1 head romaine lettuce, washed and torn 1 16 oz pkg of fresh broccoli flowerets, chopped 4 green onions - chopped (optional)
Salad Dressing: 1/2 cup vegetable oil 1/4 cup sugar 1/4 cup red wine vinegar 1 tbsp soy sauce 1/2 tsp salt 1/4 tsp pepper seasoning packet from noodles (optional) whisk together - set aside
Break noodles into pieces. Melt butter in pan over med. heat. Add noodles to pan saute till lightly brown. Add nuts. (nuts seem to brown faster than the noodles) Toss noodle/nut mixture with greens. Pour dressing over all and toss again. Serve immediately.
If I'm taking this somewhere, then I keep everything separate until it's time to serve.
