This week's menu includes the following:
Monday - minestrone soup, rolls w/ melted garlic butter Tuesday - pinto beans & rice, cornbread , cucumber salad Wednesday - Ruben sandwiches, spinach salad Thursday - baked cod, cauliflower w/ cheddar sauce, spaghetti squash Friday - beef nachos Saturday - spinach & mushroom omelets, seasoned oven fries Sunday - roast, potatoes, carrots, salad, yeast rolls

That sounds good. I'm trying to figure out what I can make with hot dogs. Last week I decided the deep freeze needs to be defrosted, and designated it "eat what's in the freezer week." In retrospect, I should have said it was "eat what's in the freezer month."

Our weather has cooled off, putting me in the mood for comfort food. This evening we're having:
chicken-a-la-king over toast points, bacon-mushroom brussels sprouts and sauteed apples & onions

We are also eating more comfort foods.
We had chicken and rice with homemade cream soup in it. worked super well!

I know this is late but Jen had mentioned that she was trying to figure out something different to do with hot dogs. Well, maybe the following idea is one that everyone would like to "tuck away" for a later date.
Combine BBQ sauce and sliced hot dogs in pot & heat until hot. Serve with thinly sliced onion and sliced bread & butter pickles on warmed hot dog or hamburger buns.
My husband and children LOVE this "change-up" to regular hot dogs.

Don't worry, we still have lots of hot dogs! My husband got a five-kilo (I think that comes to about 11 pounds) box a while ago, and that box is one of the things I want out of the freezer! My husband doesn't like onions and pickles, but he'd probably enjoy the hot dogs sliced with just barbeque sauce. Thanks!
I don't recall just what I did with the hot dogs the day I made that post about them. No, I do remember now: I diced them and used them instead of ground beef with hamburger helper!

we don;t really do menu planning per say. I see what is on sale, buy that and then figure out what I can make from it.

Me, too.
I should plan ahead more than I do, but frankly, doing housework is so distasteful to me that even thinking about it causes me to make faces. In fact, I'm doing it right now. My nose is scrunched and my tongue is sticking out, and I'm trying my best to make my hair stand on end.
Oh, and I don't know what's for supper tonight, either. But it will be something from the freezer, which is still not cleared out. Maybe more of those ridiculous hot dogs!

I don't shop according to my meal plan, my meal plan is formulated around our food storage system. Since we do not have a garden or meat animals at this time, I shop the sales adds and purchase large quantities of only deeply discounted items that we normally eat. I generally get into town 2 x's per month - at that time I purchase fresh produce, otherwise our produce is frozen or canned. Within the next few weeks, the roads in our area will get too snowy and icy for driving. We will then be dependent on our food storage system for the next 4 months. During our "snow bound" months I will save up for re-stocking next spring & summer. tb

I finally made a list of what all we normally and the basics that go in each of the meals. Then I keep my eye out for the sales. The really good ones and then I Just buy when the deep discount happens. This has been working out very well for us.
