Pork chops on a bed of rice, and salad. (There, that's the earliest I've planned ahead since Christmas dinner!!)

Tonight will be a vegetable buffet night, steamed veggies, broccoli, carrots, cauliflower, with fat free sour cream laced dillweed, since hubby is "on the road", I tend to cook lightly for myself

Since my husband is "back on the road", my dinner will be a steamed veggie buffet, with a side of low fat sour cream laced with dill. He's a big eater, so when he's home, my main activity is cooking and washing dishes, so this is my quiet time ;D

We used to do that occasionally when I was a kid, and I always loved it!

I haven't made up our meal plan for the week just yet, but I'm certain we're having meatloaf this evening.
The "breakfast for supper" idea has inspried me to add that to this week's meal plan ... now, only 5 other days to figure out.

I think I'm going to do a meal plan, at least for suppers, this week. This is a first. Tonight, though, chicken and rice.

For all the good intentions ... yesterday evening, I boiled up potatoes, readied the corn & placed the meatloaf in the oven. BUT! I forgot to turn the oven on! We ended up having breakfast for supper a little earlier in the week than I had anticipated ... I'm planning to have the meatloaf tonight - again. LOL! tb

We having Chilidog Casserole with sour cream, Creamy Corn, Spectacular Green Beans, Lemon cake with white icing & sweet tea and milk to drink. I don't make desserts every night usually about every 1 or 2 weeks.

I'm thinking of making a dessert tonight, too... just because I have an easy cake and sauce mix that was on sale last week. Aside from that, hot chicken sandwiches are on the menu tonight. Hubby's favourite.

homemade chicken noodle soup & bread sticks Some times my best laid plans go awry. I didn't get the soup started early enough , so we ended up having pancakes, scrambled eggs & bacon ... I hope to get the soup on the table for supper tonight! tb
